The doctors from the Red Cross smile from ear to ear when Chef Boy offers them Poached Prime Ribs and Herbed Mashed Camote. They particularly adore the Pinoy touch that Chef Boy puts into this cholesterolific main course - using camote instead of potato to pair with prime ribs.  



kusina ingredients 
  • 1.5-2 k prime rib
  • 1/3 cup yellow mustard
  • salt and pepper to taste
  • 1 pc white onion
  • 1 pc carrot
  • 1 pc celery
For Herbed Mashed Camote:
  • 1kg sweet potato par-boiled and mashed already
  • ¼ cup butter
  • 1 cup fresh milk
  • 1 tbsp chopped basil
  • 1 tsp salt
  • 1 tsp white pepper
kusina instructions
1. Tie with butcher's string then season with salt and pepper, and rub with mustard.

2. Have ready roasting pan with mirepoix then place prime rib; and roast until done or around 1½ hours.

3. Melt butter, add mashed sweet potato, milk, salt pepper, mixing well and lastly chopped fresh basil. Scoop into the platter, arrange slices of roast beef.

4. Serve on the side with au-jus (gravy sauce)
