High-Protein Macaroni Salad

If you prepare a proper salad, people will be scraping the bowl for the last bite. Creating a high protein salad will compliment any meal or even have the potential to be the meal itself. Try this hearty salad made for the whole family.

kusina ingredients 
  • 5 cups Elbow Macaroni
  • 1½ cups Lady’s Choice Mayonnaise
  • ¼ cup milk (more if needed)
  • 1 sachet pineapple tidbits
  • 1 cheese, cubed
  • 2 whole white onions, minced
  • 1 can of Spam, cubed
  • 2 stems parsley
  • 1 carrot minced
  • 4 pcs boiled quail eggs for garnishing
  • 3 tsp Sugar, more or less to taste
  • ¼ tsp Salt, more to taste
  • white pepper, more to taste
  • Pickle Juice (Spicy Sweet Pickles)

1. Boil the macaroni till it’s done, then drain it. Rinse the macaroni with cold water with ice cubes to stop the cooking process. Set aside.

2. Mince carrots and white onions. Slice the spam and cheese into cubes.

3. In a bowl, mix in Lady’s Choice Mayonnaise, add some vinegar and sugar. Stir with milk just enough to make the dressing pourable. Sprinkle with fine salt and white pepper. Lastly, pour in the sweet/spicy pickle juice- to add a little kick into it.

4. Throw the macaroni into big bowl, pour in ¾ of the dressing. Save the rest. Mix.

5. Toss in the spam, carrots, pineapple tidbits, and cubed cheese other ingredients.

6. Taste it and add more what it needs, which include another splash of pickle juice. Add the remaining dressing if you think it needs it.

7. Chill the  macaroni salad for two hours.

8. Pile into bowl and garnish with quail eggs and garden parsley.

9. Serve with toasted garlic bread or barbeque.
